Nothing says fall like pumpkin spice. And, nothing says Mobile like a Moon Pie. So, when the iconic Mardi Gras treat came out with a pumpkin spice flavor, we knew we had to try it. But, why not take it up a notch and make it truly Mobile?

Introducing the pumpkin spice Moon Pie ice cream sandwich [from Toomey's Mardi Gras], made with Cammie’s Old Dutch Ice Cream Shoppe’s creole praline. Soft cookie, marshmallow, pumpkin spice, vanilla ice cream, swirls of caramel, and crunchy praline bites – what’s not to love?

This quick treat is sure to impress your kids, guests, and your taste buds!


Makes 12 

The Ingredients:

  • 1 box of pumpkin spice Moon Pies

  • 1 pint Cammie’s Old Dutch Ice Cream Shoppe creole praline

The Steps:

  1. Remove all Moon Pies from their individual packaging.

  2. Carefully, peel the Moon Pies apart into two halves. One side will have the marshmallow remaining. TIP: Use a butter knife to gently separate if needed

  3. Line a baking sheet with parchment paper and place in the freezer.

  4. One at a time, top one side of the Moon Pie with 1 scoop of ice cream. About 1-2 tbsp. Cover with the other half, gently press, and immediately place on the lined baking sheet in the freezer.

  5. Repeat until all ice cream sandwiches are complete. Freeze for at least 30 minutes before enjoying.
